Our culinary expectations are thoughtful and specific. At the heart of the role is true excellence in:

• Authentic Italian cooking rooted in seasonality, restraint, and ingredient integrity
Proven sushi capability (confident knife work and proper rice technique) is highly valued, as is broader Asian fluency (Thai, Vietnamese, Indian and Far Eastern influences). However, mastery of Arabic and Italian cuisine remains their priority. Dining ranges from casual to fine dining, depending on the mood.
Principals place strong importance on ingredient quality and culinary discipline. The chef will be responsible for their own provisioning in order to personally select the freshest and best seasonal products available. We expect all sauces, stocks, breads, and desserts to be prepared from scratch. We are not seeking a chef who relies on ready-made sauces or shortcuts, craftsmanship and authenticity are essential.
Cleanliness, organisation, and respect for the galley are equally important to us. The kitchen must be maintained to the highest standard at all times, with careful treatment of equipment, knives, and utensils. Professional pride in maintaining an immaculate and orderly workspace is non-negotiable.
The chef will cater for up to 12 guests and 14 crew. We value a professional who can transition seamlessly between elevated plated dining for special evenings and consistently excellent, vibrant family-style meals day to day. Menu intelligence, variation, and the ability to keep cuisine fresh and inspiring over time are particularly important to us.
Equally essential is temperament. We are seeking a grounded, disciplined, no-diva professional who takes pride in craft, organisation, and discretion within a private family setting.
For an exceptional candidate who truly excels across these cuisines and aligns personally with our environment, we are prepared to consider the appropriate upper salary bracket.
There is also potential for a year-round role, transitioning between yacht season and our private Tuscan wine estate outside Florence. Outside of yacht season, we offer 90 days of paid leave annually. This long-term opportunity is optional and would depend on mutual compatibility.
Paid job trial to be conducted ASAP, with the possibility that the successful candidate begins work after the trial at the principal's villa in Tuscany.
Salary is €10-12,000 per month DOE
