Summary

THIS IS A LANDBASED POSITION SUITABLE FOR IRISH CANDIDATES ONLY. ACCOMMODATION PROVIDED.

We are working exclusively with a returning client who is looking for an experienced Private Chef to work on a large and beautiful estate located in the West of Ireland. The ideal candidate will have a strong passion for food and experience in private households or yachting. You will join an existing Head Chef to form a team of 2, responsible for delivering a high standard of food to family members when in residence, catering for formal dinner parties as required, and providing lunches to the staff on the estate. This is not suitable for chefs with extensive head chef experience, as they already have a head chef.

We are only able to consider Irish candidates at this time – whether you already live in Ireland or are looking to return home.

Accommodation is provided on-site if required.

Key Responsibilities

  • Design menus tailored to specific events for the principles and estate staff.
  • Preparing and cooking beautifully presented family style meals with occasional fine-dining and private dinners / parties
  • In addition to food preparation for the family, preparation of lunch for 15 staff members (Monday to Friday) who work in the main residence and offices.
  • Meal related budget management and shop to replenish food stocks as required, maintaining expiration dates.
  • Using fresh, high-quality produce sourced locally and internationally.
  • Discussing the daily menu with the household staff / Family in advance.
  • Identifying future trends, opportunities when menu planning.
  • Comply with dietary requirements, have tasty, nutritious and visually appealing menu items available for dietary needs and abide by all sanitation regulations.
  • Ensure that all food preparation is in accordance with regulatory guidelines and ensuring quality measures and hygiene systems are achieved at all times.
  • Foster a climate of cooperation and respect between co-workers.
  • Manage the busy service periods and produce a high standard of food.
  • Collaborate on schedules in advance to ensure chef cover is in place 7 days a week when the owners are in residence. This planning is in conjunction with our current private chef.
  • Arranging additional kitchen staff for larger dinner functions / parties.
  • Some national travel with the family to other properties

Ideal Candidate

  • A minimum of 3-5 years’ experience in a luxury private environment.
  • Creative, innovative and extremely well organised.
  • Exceptional culinary skills with a creative edge.
  • Fine dining experience.
  • Excellent knowledge of menu design and cooking from family style / casual dining to fine dining.
  • Excellent communication skills.
  • A passion for fresh seasonal produce and ingredients.
  • Excellent communication skills.
  • Impeccable health & safety and hygiene knowledge.

Package

  • Salary: €60,000 – €70,000
  • Live in accommodation on site
